When you’re interviewing for career change, the company will tell you their values. Many people talk well, but they always don’t do what they say they do.
You get a better understanding of an organization and they get a better understanding of you from your questions. You want to probe to get a better understanding of the organization’s values and culture.
When you interview them, find out how they’ve made a recent decision. Who was involved in making the decision? How did they each feel about it? What was their boss looking to accomplish?
